New York City's Henri Bendel was bursting with color to celebrate the expansion of Molly Sims' jewelry empire with the introduction of Grayce by Molly Sims The Collection, which looked "good enough to eat," said "close friend," Aaron Eckhart, who also shot the ad campaign.

The new jewelry line is being sold in Sims' own pop-up shop at the high-end retailer and will soon be available on her Website. (She currently sells the more affordable 'Grayce by Molly Sims' on HSN.)

"I'm so excited to be on Fifth Avenue; I have two square feet all to myself," Sims told StyleList at the event, where, in addition to Eckhart, guests included Dior's newest "It" girl, Karlie Kloss, Australian actress Melissa George, and "Gossip Girl" star Kelly Rutherford.

"I'm surrounded by so many amazing designers, and I'm just lucky to be here," Sims added. "I've been coming to Bendels since I was a kid. I'm from Kentucky so this was New York to me."

Looking gorgeous with beachy blonde waves and perfectly bronzed skin, Sims -- who wore a multicolored silk printed ETRO dress, black belt, and nude pumps -- talked to StyleList about her retro-glam collection of hoops, chunky bracelets, and layered necklaces.

Eckhart also shared his thoughts about what makes his lady sparkle.

StyleList: What was your inspiration behind Grayce by Molly Sims The Collection?
Molly Sims: My style is very eclectic and that is the inspiration. It's a blend of chic and bohemian. Audrey Hepburn, old Hollywood glamour, all-American, and urban fashion -- Sarah Jessica Parker-style -- like tight leather pants.

SL: What piece of jewelry do you feel naked without?
MS: Earrings, definitely. Hoops. I love hoops. [Sims was wearing stone embellished hoops from her collection.]

SL: What is your best piece of jewelry advice for women?
MS: Layer! Mix metals and mix colors. Try different things out to see what works best for you.

SL: Since jewelry frames your face, do you have any secrets to getting great skin?
MS: I love Bliss facials. I also like a good scrub every once in a while.

SL: What are your beauty must-haves?
MS: Oh, wow. Do you have a bigger piece of paper? I love Rodin Olio Lusso face oil, Bobbi Brown eye color and liner, and Bobbi Brown bronzer. I really love those Kate Somerville Tanning Towelettes.

SL: What are your favorite items for spring?
MS: Jumpsuits. Blazers with rolled-up white pants.

StyleList: What do you admire most about Molly and her style?
Aaron Eckhart: She is always smiling, has a lot of energy, and is very graceful. She is a real woman and that is what her jewelry is. It just looks delicious. I want to eat it.

SL: Is there anything about Molly's beauty and fashion that has affected your lifestyle or daily routine?
AE: I'm not sure about my own fashion, but what I love about Molly is her creativity. She knows how to make things happen, and she knows who she is, and I really admire that.

She has the freedom to be who she wants to be and that is how she represents herself in pictures and how she portrays herself to young people. She has a real love of life and that comes through.

I am a fashion head case though.
